Thaw scallops overnight in refrigerator.
Combine lemon juice, lime juice, jalapeno, red pepper, cilantro, salt and pepper and set aside.
Remove thawed scallops from package and pat dry with paper towel. Add the scallops to the marinade. Cover and allow to sit refrigerated for minimum 2 hours, stirring every 1/2 hour.
Remove scallops from marinade and serve on leaf lettuce or a lightly dressed salad.
